My Mothers Day breakky

French toast with strawberries made by my wonderful husband.
Yummmmmmmmmmm....

French Toast (Pain Perdu)

what you need
6 large free-range eggs
150g caster sugar
300ml whole milk
few drops vanilla extract
1 day-old uncut white sandwich loaf
175g unsalted butter

what to do
  1. Mix the eggs with the sugar in a large mixing bowl to dissolve the sugar.
  2. Gradually mix in the milk and vanilla extract. Divide this mixture between two large dishes.
  3. Cut the crusts off the loaf and cut five slices about 2cm thick. Cut these in half, then place all ten pieces into the egg mixture. Leave for five minutes, then carefully turn each piece over and leave for a further five minutes.
  4. Heat a large knob of the butter in the frying pan and when foaming begin to fry the bread slices a few at a time. Allow two minutes per side before turning over. Each piece should be a good rich golden-brown.
  5. Remove the slices and place on a baking tray. Repeat this process until all the slices are cooked, remembering to wipe out the pan between each batch to stop the butter from blackening.
  6. Serve with lashings of maple syrup, fresh strawberries and mint leaves and a dusting of icing sugar.

I shall get him to share the recipe - he watched the MasterChef Masterclass the other day and amended his usual french toast recipe to match...methinks lots of sugar and fat involved (but oh, so good!)

Oh that looks sooo good, I got coco pops and a cup of tea :) but girls are divine! I was so spoilt now they are old enough to demand that their rather slack dad takes them shopping - I have taught them well..
